Culinary Students Tired of Rats and Roaches

ABHTIAntigua St John's - Students of the Antigua and Barbuda Hospitality Training Institute (ABHTI) culinary class refused to work on Wednesday, protesting what they said was a rodent and roach infested kitchen.

The students, although somewhat reluctant, told Caribarena.com that the situation dates back to the beginning of 2011 when they started the class.

They share a kitchen with the basic cookery class, which has reportedly left a dirty kitchen behind for the culinary students to clean.

“Every Wednesday we cook, and when we come the kitchen is very untidy because of the previous class," a student explained. "When we leave the kitchen, we have to leave it clean. We have to scrub down. And we find it very unfair that every week we come we have to be cleaning up after them."

The student said they have repeatedly complained to their instructor, who has reportedly shared their grief with Director Calvin Ambrose.

“We complain every week, and he said he is trying to deal with the matter every time. This is the last week. We are fed up,” the spokesperson said.

Several students left the campus Wednesday with the firm commitment not to clean up after the other class which had catered a function on Tuesday night.

“It has been seven weeks, and it is unfair. Rats are all over the place, and roaches, and it is not sanitary for us to be cooking in there. It smells really bad,” the student said.


Caribarena.com approached Ambrose for a comment Wednesday, but was greeted with hostility in the lobby of the ABHTI administrative office.

He told this publication that he not only had no comment on this or any other subject, but that Caribarena.com should rely on information from “sources," since his statements did not matter.

He then turned his back and stormed off to his vehicle, claiming to be late for a meeting.

None of the students returned to the kitchen, and alternative arrangements reportedly had to be made to cater to guests utilizing the institution’s conference room for the day.

HTH Peppersauce your reasoning is really messed up. You justify nastiness with more nastiness? So a training school which is suppose to train students to do the right thing must train them to do the wrong because it happens in the real world? So because there has not been a major breakout of rat born illnesses we should continue to do things which can cause a breakout?

You sound like one of the lecturers or staff at this place - people with really displaced logic training youths of the future to be leaders in the industry.

"A PICTURE IS WORTH A THOUSAND WORDS" next time you see these pest, prove it, by taking pictures of the dirty kitchen, rat droppings and so on. Mr. Ambroses is now disputing to the media that the institute has any rodent infestation. Mr. Ambroses has the board backing him 100%, no matter what you guys do or say. That's just how this country is running. I'm so sorry for you all, voices lost in the wilderness.

You've got to be kidding me. People on this forum are letting on as though this is the first example of improper food handling and roach / rodent infestation. "Risk of illness and even death"?? Where have these people been doing their fine dining?

From the little "Chinee shops", to the Shawararma huts, you'd pass 40 places per day, where the 'food prep area' is far worse than what is at the college.

Please students, I just heard Calvin Ambrose on Observer Radio saying that this story is a lie and that he knows which students spread the rumor and that the board will deal with you. Students now is the time you need to stand together to fight against these wicked people in a legal manner. Your power is in your numbers so do not be afraid

"scrubbing down" as you put it is a maintenance issue and if you knew your rights would not have been used in such a way by lecturers and board members who are using you to provide meals for profit. This is the problem with ABHTI from my point of view - students like just graduated do any and everything for a man who does not care about them because they are seeking affection and attention. I salute the culinary arts students for finally taking a stand. You attend the institute to learn to cook and then clean your stations and not to be maintenance staff in a work camp

I know for a fact the young culinary instructor has complained many times to the head about the way the Basic class and their instructors leave that place.

Mr. Ambrose it's time enough you crack the whip on those students and your staff the same way you cracked it on us. When we had Ms. drill seargeant as our instructor we could not in our right mind leave her kitchen dirty.

Same way you implemented that scrub down on Friday nights and did your walk through after, you need to do it during the lunch service too.

When we left there, there wasn't any infestation.

Is it a fact the the head of the tourism authority/board member of ABHTI has a son in the same culinary class that refused to clean the kitchen? Did he walk off the compound too? This story gets more and more interesting.

As a past student i cant understand where they are coming from having to deal this and has countless time been ignored if the instructors are not practicing sanitation how can they keep a clean environment... I hate Mr. Ambrose firstly for his autocratic behavior to him his instructors are always right :sad: and am worried about his ignorant ways for the future of the school>>>>>>>Mr .Ambrose and some of the incompetent members of the board needs to go he needs to resign he's is to laid back.....

the school is suppose to be used as a training facility for hospitality workers equipped with a training kitchen and restaurant. The problem is that they using the school as their personal place to have functions which goes beyond the scope of what the students can run. In other words the tuesday night function served 100's with students who barely know how to cook and serve. So what resulted was that the time management failed and because there was already a lack of trained human resource persons, the dishes backed up. The students would have been there until 1am if they had to clean up. I would blame the management and chefs of this institute and not the "free labour for grades" students

This facility is putting people’s health at serious risk, as it seem that they cannot put a cleanup policy in place is laughable. What does it say about the students who cook and leave the kitchen dirty? How are they getting passing grades when they don’t clean up? This facility should have an exterminator on its payroll that makes at least monthly site visits as part of a going pest control program. The management has to be proactive when it comes to pest control; they cannot afford to wait for roaches and ** infestation, by that it will be too late not to mention more expensive. Pest control should be part of any restaurant operation budget.

This situation is not unique to just this establishment, the whole island is infested with cocker roaches AND rats, just keep trowin dem chikken bones on de ground.....

Someone external needs to get involved and work on settling this matter. The instructors seem to see the students as pests. Its reminds me in some ways of the way government workers seem to see customers. Ambrose, I suspect, tells himself that because in his mind he wants whats best for the students, their opinions should not matter. Considering the last time Ambrose made a statement, I can understand why he would be reluctant to speak to the media. His statement some months ago showed him as an individual with autocratic type tendencies.

I feel like throwing up... Sorry for all the people who have been enjoying meals there... Rats, roaches - maybe more... I bet the food there taste great but...

AND @ Pellucid - Even the CIA need good working conditions and clean environment. Their case is worst because they cook for people, not animals AND they are humans.

The Tuesday night over a 100 people were up there for a private function till they had to put extra table outside for them. They left all the dirty dishes for the Wednesday class to wash up in the morning, but me glad the students stand up for once. This place is not about no learning but about making money only. I wonder where all this money from function going?

Is a very serious condition which is caused by humans coming into contact with rats or their droppings. This puts the students at this place at serious risk of illness and even death. It also puts the diners at serious risk of death too. CBH and the Ministry of Tourism need to immediately investigate this matter because this time it is not about egos but it is about people's health and safety!
